~ 龍須麺について ~

news那須のホテルサンバレー中国レストラン「万里」の総料理長、黒田弘シェフが、去る11月28日、那須ガーデンアウトレット(那須塩原市)において中国宮廷料理のひとつ「龍須麺(ロンシンメン)」で、ギネス世界記録TMに挑戦し、見事、新記録を達成した。
この「龍須麺は、麺生地を伸ばして2つに折ることを繰り返す事により、4本、8本、16本と面を細く増やしていく中国伝統の技術の一つであり、古来、皇帝の称賛を受け、「龍須麺」の称号を得たというもの。龍のヒゲを意味し、麺が絹糸のように細いことから針の穴も通すといわれている。現在、中国では、細く長く長寿の祝いや誕生日に食され、かの有名な満漢全席のメニューのひとつでもある。
今回の挑戦では、これまでの中国人が持っていた記録1分間13回折りを大幅に更新する16回折り(6万5536本)に成功というのだからすごい。
この喜びを黒田シェフは、「1995年から中国政府すじの北京料理人の手ほどきを受け師事し、2005年から世界記録を意識し始めました。2年前から毎日のように練習を行い、さまざまな粉の調合から、水の分量、麺打ちをする部屋の温度、湿度などの何千通りのデータを蓄積してきました。その間、試行錯誤の連続で、記録達成に成功し大変嬉しいです。日本人は、手先が器用で技術を身につけるのが早く、勤勉、誠実だからこそ、みなさんもあきらめない努力により、何か目標を持って挑戦してもらいたいですね。達成した喜びはひとしおです」と語ってくれた。
黒田シェフは、すでに2007年に認定された世界一長い麺「一根麺」で548.7メートルの記録を持っており、今回の世界一「龍須麺」の記録が正式に認定されれば2冠達成となる。

Japanese chef breaks a second Guinness world record for traditional Chinese dish.

On November 28, Mr. Hiroshi Kuroda, who is the executive chef at the Chinese restaurant of hotel "Sun Valley" in Nasu Town, made a successful attempt to break the world record for one of the Chinese court dishes - Ron-sin-men. Being one of the traditional Chinese arts of cooking, Ron-sin-men noodles have received the Emperor's admiration from ancient times and were named so by the Emperor. They are made by folding the dough, as with each folding the number of noodles multiplies 2, 4, 8, 16..., and the noodles become thinner and thinner. Ron-sin-men means "Dragon’s Beard", and since the noodles are thin like silk thread, it is said that they can pass through a needle hole. These days, in China they are eaten during celebrations and birthdays as a symbol of long life, and are also part of the menu for the famous Manchu Han Imperial Feast. During this attempt, Mr. Kuroda succeeded in folding the dough 16 times in 1 minute, making the unbelievable 65,536 noodle strings, and broke the current record of 13 foldings, which belonged to a Chinese cook.
"I was introduced and learned these skills from a chef of the Chinese Government in Beijing in 1995 and began to prepare for this record in 2005. I have been practicing every day during the last two years, gathering data, such as quantity of water, temperature and humidity of the chamber where noodles are made etc., and have tried more than 1000 various combinations of flour. During this period, there were many failures and now I am so glad that I succeeded and broke the record. Japanese people are handy, diligent, sincere, and learn fast. When they have a target they work hard and don’t give up easily. I am satisfied with what I achieved." - said Mr. Kuroda.
In 2007 Mr. Kuroda made a 548-meter-long noodle and he is the current holder of the Guinness world record for the longest noodle. When Ron-sin-men is aproved, it will be his second Guinness world record. Now, all the necessary documents are being prepared and the certificate from Guinness world records company is expected to arrive early next year.
